Directions:

  • Mix the honey, lime juice, lime zest and olive oil.
  • Place all the other ingredients in a large salad bowl.

  • Drizzle with dressing.

2. Lemony Chicken and Dill Soup

Ingredients:

  • 3 chicken breasts
  • 8 c. low-sodium chicken broth
  • 3 medium carrots
  • 3 stalks of celery
  • 3 garlic cloves
  • 2 bay leaves
  • 4 c. pack of fresh baby spinach
  • ½ medium onion
  • 3 spring fresh thyme
  • 3 tbsp. of fresh dill
  • 2 tbsp. of olive oil
  • Salt
  • Pepper
  • Orzo
  • 2 tbsp. of lemon juice
  • 1 tbsp. of lemon zest

Directions:

  • Heat the olive oil over medium-high heat,
  • Add the onions, garlic, carrots, and celery to sauté it for a couple of minutes until the onions become soft.
  • Add the chicken, thyme, broth and bay leaves.
  • Season all the above-mentioned ingredients with salt and pepper on your wish.
  • Cover the pan and let it boil.
  • Reduce the heat and simmer it from time to time for about 30 minutes.
  • Throw away the thyme and bay leaves.
  • Remove the chicken and place it into a bowl so you can shred it into small pieces.
  • Stir the pasta into broth and let it cook for about 10 minutes.
  • Add the dill, baby spinach, lemon juice, lemon zest and the shredded chicken.
  • Season it with salt and pepper on your wish.
